Smoked Turkey Lentil Soup
- Makes 8 Servings
- 2 Tbsp canola oil
- 1 medium onion, chopped (~ 1 cup)
- 1-8 oz package of sliced mushrooms (~2 cups)
- 1 tsp finely chopped fresh garlic
- 4 medium carrots, sliced 1/4-inch (~2 cups)
- 4 stalks celery, sliced 1/4-inch (~2 cups)
- 1 cup dried lentils
- 2 cups water
- 2-14 1/2 oz canned chicken broth
- 12 oz smoked turkey, cut into 1/2-inch cubes
- 2 tsp dried thyme leaves
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 cup fresh parsley or 2 Tbsp dried
- 1 Tbsp lemon juice
- 1 tsp grated lemon peel
In Dutch oven heat oil until hot. Add onion, mushrooms and garlic and cook over medium heat, stirring occasionally, until vegetables are tender (~6-8 minutes).
Add all ingredients EXCEPT parsley, lemon juice and lemon peel. Cover and cook over medium high heat, stirring occasionally, until mixture comes to a full boil (12-15 minutes). Reduce heat to low and continue cooking until lentils are tender (35-45 minutes). Stir in parsley, lemon juice and lemon peel.
